Rice Flour custard 2 cups milk boil 2 level tbs rice flour disolved in ⅓ cup cold water 2 tbs sugar yolk of egg mixed with little cold milk add after the rice flour + milk have thickened + a little vanilla or sherry + mace + just before done the well beaten white - pour out in dish to serve + cool. serve with cream if desired

Scald take off skins and boil about one hour wash the jar and have a sauecpan of boiling water to sterilize the lids and rubbers & jars take a wooden spoon to turn the jars in water, take out and stand in a cloth wrung out in cold water & bring up up around the edges to prevent breaking of jar put on rubber first & fill with boiling tomatoes fill to overflowing put in a silver fork to leave out air wipe carefully around the top & screw on lid
