Pan [loafes?] 4 oz. flour 2 eggs ½ pint milk salt Beat flour yolk of eggs & milk well stand for an hour fold in well beaten whites of eggs just before baking, put in small buttered pan, brown & turn serve with sugar & slices of lemon or jelly - makes cakes about size of cup saucer. Very good

Clam fritters mince 8 large clams drain place in a bowl + add {Beat + make batter + add clams} 1 cup flour 2 tsp b.p. baking pwder sifted ½ tsp salt ¼ tsp paprika ½ tsp grated onion 1 tsp parsley (chopped) 1 well beaten egg ¼ cup milk mix to batter + fry on hot griddle or deep fat

Mush 1 quart boiling water in double boiler 1 tsp salt 4 oz yellow corn meal sift in slowly beating swiftly with an egg whip cook about 3 min return to [milk?] boiler + steam for 4 hr or more sift in about 1 lbs flour let cook ½ hr + turn out in a round dish or shallow tin plate

Wine Jelly ½ package Knox's Gelatin ½ lb sugar 1 lemon + rind ½ oz cup of wine Soak gelatin in 1 cup cold water add lemon + sugar + 1 pint boiling water, let it come to a boil, beating with an egg whip when it comes to a boil remove from fire, cover + let stand 10 min add wine + strain
