Strawberry Water Ice.
1 qt. strawberries, 1 qt. water. 1 lb. sugar.
Juice of 2 lemons.
Add lemon juice to strawberries and let
stand mashed 1/2 hour. Strain through a sieve.
Boil water and add sugar a few minutes.
Cool. Add fruit and freeze mushy.
Raspberrie ice may be made in same way.
If fruit is very sour omit lemon and
add a little more water.
A sherbet may be made from the
above by adding, after ice is partly
frozen, 1 cup whipped cream and the
whites of 2 eggs beaten stiff.
