Marshmallow Parfait

Cut 1 lb marshmellows in small pieced ^add
1/4 cup boiling water and stir in a double
boiler until marshmallows are melted.
In the meantime let
1 1/2 cups sugar.
1/2 cup boiling water.
1/4 teaspoon cream of tartar boil until it
forms a soft ball when tested in cold
water, then pour in a fine stream onto
the beaten whites of 2 eggs beating constantly.
Then beat occasionlly until cold. Add
marshmallows melted and fold in a
pint of double cream and cup of single
cream beaten solid. Turn into a
two quart mould. filling it full.
Spread a paper over the top and cover.
Let stand burried in equal measure
of salt and ice for about 4 hours.
