Cream Puffs.

3 eggs
1 cup water.
1/2 " butter.
1 " flour.
Separate the eggs and whisk the whites stiff.
Put the water and butter in the sauce pan
over the fire and when boiling add the
flour all at once, stirring vigoriously
until the mixture clears from the side
of the pan. Take from the fire add the
yolks of the eggs one at a time, beating
2 min, after each addition.

Drop on a pan floured or lined with
paper and bake in a moderate oven.
This makes 12 puffs. Fill with whipped
cream or any desired filling.
