Persimon Cookies
1 cup persimon pulp 1/2 cup butter 1 tsp baking soda 1 cup raisins or dates 1/2 tsp nutmeg 1 cup sugar 2 cups sifted flour 1 cup nuts 1 egg 1/2 teaspoon cinnamon
Grind nuts, raisins, mix with flour and spices. Dissolve soda in persimon pulp, cream butter and sugar, add beaten egg then persimon pulp.
Stir in mixture, bake in moderate over 350 degrees for 15 minutes or until firm.

Ritsy Biscuits
2 1/2 cups flour 1/2 tsp soda 6 tlbs shortening 1 tlbs sugar 1/2 tsp salt 1/2 cake yeast dissolved in 1 cup buttermilk
Mix as you would biscuit, and roll to a thickness of 1/2 inch. cut with buiscuit cutter dip in melted butter. Place one on top of the other. Let rise 1 1/2 hours. Bake in 475 degrees for 15 minutes.
