boil them twice—I am surprised at an observation
of Dr Willick on the subject—he says boiled hams
are not so digestable—and prefers broiling
them. This is a great error; when boiled the way
recommended by Mr Jefferson they are far from
being indigestable, and when broiled they contain
much empyreumatic oil. In a state of health and
in warm climates they should be often used.

Fish are salted and constitute a great portion of
human subsistance. Shad and herring are the
