To make Milk water
Take a handfull of Carduus, of Balm, of Spearmint
of Meadow Sweets of each one handful, of Angelico a little
handful, & a small Sprigg of wormwood first scalded before
it is put into the still, put all these in 2. quarts of Milk, and
halfe a pint of water.
To make Pottage
Take a legg of Beefe, a nuckle of Veale, or a fowle or
a neck of Mutton, boyl it to a Strong broth, put some Pease in it,
then straine it all out, then put it into the pott againe, and put
in some whole pepper & burrage some, put it in first, it being
long a boyling, then bolts Spinage, Endiffe cut them a little--
halfe apound of Leanish Bacon, three Cloves in an onyon
a bunch of Sweet herbs, as sweet Margrum thyme & savery,
& a little mace, then when you take it up, a peice of Sweete
butter, & salt to your tast, & hit tosh about the dish, you just
put in some Sorrell if you make it in Somer, thick it with
white bread, & put in green pease, & if you save gravey &
boyl it up in it, it is very good, you may make force balls
if you please.
